Popup of Our Dreams: Kamonegi x Chan

In which the Japanese chef adds the Korean, the Korean chef adds the Japanese…and dungeness crab chawanmushi with chogochujang happens.

Soba maestro Mutsuko Soma, who crafts the buckwheat noodles that have made her pop up Kamonegi the toast of Seattle, and Korean food superstar Heong Soon Park, whose Chan Korean gastropub is the underheralded gem of Pike Place Market, will collaborate on a one-night popup at Chan on Sunday, March 5.

For $85, guests will receive six courses along with assorted banchan (the mini side dishes of Korean cuisine), bev pairings $30 extra (or available a la carte).

Spoilers: Sake Kasu braised Kurobuta pork belly and Wagyu short ribs. And—followers of both chefs will love this—Korean fried chicken cold soba with hot dipping sauce.

And, of course, the aforementioned crab custard with Korean red pepper paste.

The kicker? Each chef will be leaving his and her comfort zones to contribute culinary touches from the other’s tradition. But fear not: Soma’s on soba.
