Since Ciudad opened in June, its sibling walkup bar around the corner has dispensed slushy frozen cocktails, buckets of Modelo, and various other beverages suited to making the most of the large patio. Summer may be over, but impetus to visit Bar Ciudad will carry on—in the form of rotisserie chicken.
Owner Marcus Lalario says he'd wanted to sell roast bird here from the start, but wasn't sure he'd have space. His crew figured out the logistics, so Bar Ciudad will shut down October 1 for a quick remodel to accommodate a rotisserie machine.When it reopens, Georgetown denizens can queue up for whole or half birds and a handful of sides.
Those sides will definitely involve root vegetables in chicken drippings, says Lalario, and likely some dirty rice and a salad. Chef Nick Coffey is dialing in a house spice rub for the chicken—and readying a brunch menu over at Ciudad, which will debut in mid-October.
The beer-slushy-draft cocktail lineup will remain, says Lalario. "It's very much a bar." He just wanted to add some food, and happens to love chicken. Look for Bar Ciudad's poultry-spinning return, hopefully, in early December.
