Seattle tastemakers reveal their favorite foodie finds. This week: Crow’s Craig Serbousek.

We owe Craig Serbousek, co-owner of Queen Anne faves Crow and Betty, a Negroni. That’s his favorite drink. “Duh. Isn’t it everyone’s?” asks Serbousek. “I religiously drink one Negroni and watch the The NewsHour with Jim Lehrer every night. No I mean it. Every night.”

Serbousek got pulled over while he was giving us his picks for the Seattle stuff he’s most into right now, so the least we can do is buy him a drink. You name the time and place, Craig.

Ingredient of the Moment
My ingredient is always bacon. We dry rub it and let it sit in the walk-in for a few days, then brine it and smoke it over hot smoke. We get the pork belly from Nicky USA, based right here in Portland, Oregon.

Restaurant
Lark. I love Jonathan [Sundstrom] and all the people there. He uses the best ingredients.

Cookbook
My favorite cookbook right now (and this changes all the time) is called Charcuterie by Michael Ruhlman and Brian Polcyn.

Coffee Fix
If you must know, every morning I have a short double americano with lots of room from Caffé Fioré. I put in a little cream, but I like it strong.

Guilty food pleasure
Red Baron Frozen Pizza with pepperoni and sausage. I always eat it when my wife goes out of town, which isn’t very often.

Book
My favorite book is 100 Years of Solitude. But I’m not really reading anything right now. It’s summer, you know? Well, I’m reading Esquire a lot. It’s my favorite magazine.

Um, by Esquire we assume you mean Seattle Met, right Serbousek? Hmm, maybe you’ll have to buy your own Negroni after all.
