Brady Williams Announces a Tomo Dinner Series with His Chef Pals

Expect varied collabs with the likes of Mei Lin and Carlo Mirarchi.

Tucked between a beer hall and an adult video store in White Center, Tomo was always destined for buzz, especially given Brady Ishiwata Williams’s lauded tenure at Canlis (and a James Beard nod for its wine program to boot). Now the chef-owner is generating even more of it with a new dinner series announced for this spring and summer.

The six-part culinary event includes collaborations between Williams and his "chef-buds" from around the country, with each one "a little different in form, feel, and structure." 

The first dinner, scheduled for April 30, is a six-course tasting menu with beverage pairings, a joint effort between Tomo bar director Greg Bonney and Top Chef season 12 champ Mei Lin (the two have known each other since 2011 when they both worked under Michael Voltaggio). Lin returns May 1 with an offering to the altar of fried chicken, crafting a Szechuan fried chicken sandwich, fries, and Hong Kong milk tea for takeout lunch. 

May 14 brings another six-course tasting, this one presented with Carlo Mirarchi of the conjoined Roberta’s (of perfect pizza dough fame) and Blanca (a two Michelin-star tasting counter). Menu details are scant, but Williams and his chef de cuisine Diana Mata García both worked alongside Mirarchi at Blanca, so expect a concert of flavors that only a deeply informed friendship can bring.

The other four chefs participating in the dinner series will be announced this summer, about a month before the event.

Only 45 tickets ($165, plus $85 for wine pairings) are available for each six-course tasting. Tickets for Lin’s dinner will be available on Tock starting at 10am on April 12. Tickets for Mirarchi's dinner will go live (also on Tock) at 10am on April 26.
