Vegans Rejoice—The Cookie Counter Opens in Phinney Ridge Today

In 2014, co-owners/husband and wife duo Chelsea Keene and Chris Olson started serving vegan ice cream sandwiches from a 1974 Volkswagon ice cream truck. Since then, the couple converted a former yoga studio into their retro-styled paradise of vegan treats. Now, The Cookie Counter is officially open at 7415 Greenwood Avenue.

With more space comes more plant-based offerings. “We’re really excited to scoop ice cream into a cone,” said Keene last year. While The Cookie Counter is known for their vegan—and often gluten-free—sandwiches and ice creams, there’s even more to dig into here: fruit-filled hand pies, pop tarts, affogatos topped with Anchorhead espresso, cold brew floats, sundaes topped with chico stick crumbles (!), and more. A menu vegans and nonvegans alike can get behind.

Mornings will consist of breakfast cookies, pastries, plant-based milk lattes, and caffeinated goodness from Washington’s own Anchorhead Coffee. And everyone loves a good happy hour, here it involves the classic pairing of milk and cookies Tuesday through Friday from 3 to 5.
