Last week I happened into Canon and Jamie Boudreau shared a few details about the cocktail palace’s brunch plans. It seems his is another local establishment enamored with the possibilities of cereal-flavored milk, popularized by Christina Tosi at Momofuku Milk Bar.
Brunch will begin later this fall, as soon as buildout finishes on an expanded kitchen space so morning service can coexist with bar and dinner prep. It’s no surprise that the classic Ramos gin fizz will appear on the brunch menu (and thank goodness, because making those suckers at home is tough), but Boudreau recently previewed Canon’s version (pictured here), made with gin, lemon, orange blossom water, egg white, soda, and…milk infused with Froot Loops. Boudreau has a few other cerealified items in the works as well.
Sugary cereal milk might seem a surprising choice in this dark-hued palace of brown liquor. But it's nice to know this serious den of drinking isn't afraid to be playful.
