While the turkey steals most of the glory, the pie is technically the culmination of any Thanksgiving meal. It’s also one of the easiest dinner components to outsource. Whether you’re hosting the entire meal, or signed up for dessert duty for the potluck, Seattle’s favorite pie bakeries have got you covered.
Macrina is baking up a few conventional pies with tasty twists: double crusted apple pie made with maple sugar, pecan pie enhanced with orange zest, pumpkin sponge cake with a brandy kumquat filling and candied walnut roulade. If you’re dealing with a tableful of picky thanks-givers, stop by Pie in Fremont. Their four-inch mini-pies (and two-bite mini-mini-pies) allow everyone to get just what they want. Classic holiday flavors include ginger-infused pumpkin, Washington apple, and pecan; more adventurous guests might opt for pumpkin chai spice cream or cran-apple. Special orders are the way to go – place them before November 19, and call to inquire about discounts for larger orders. Shoofly Pie Co. offers an assortment of weird and wonderful autumnal desserts: apple, pumpkin, and pecan, sure, but also cran-apple crumble, shoofly (naturally), rhubarb, chocolate cream, and dark chocolate pecan. If your sole struggle is achieving the ultimate flaky, golden crust, just pick up the pre-perfected dough from Shoofly and do the rest at home. Hit up Seattle Pie Company for reliable classics: pumpkin, maple pecan, American apple, and crunchy apple crumb. The kicker is the lard-laden crusts with a leaf design that lends a rustic, pilgrim-appropriate charm. High 5 Pie of Capitol Hill is offering up some spirited takes on Thanksgiving treat tradition. Their pumpkin pie is dense and browned and sunken under a perfect glazy skin; the other (less familiar) November specials are spiced plum walnut, hot mulled cider, sweet potato, and cranberry nut. A la Mode Pies, the delivery service turned pie cafe, serves up some whimsical flavors, including the coconut- and blueberry-laced “Blue Hawaiian,” Mexican chocolate mousse, marionberry hazelnut, and apple, ginger and pear. The headliner this holiday season, though, is the pumpkin tart, a custardy spiced pumpkin filling in a shallow gingersnap crust, topped with maple-suffused whipped cream and garnished with candied pecans. Place your order by 5pm on November 21. If you’re in dire straits, the shop will have a small number of whole pies on sale in the store. The shop is open for pie pickup until 1pm on Thanksgiving, and there are even a few delivery slots left (it’s free to most Seattle neighborhoods!).
