The cake-like ensaimada.

If there’s a silver lining in the closing of Txori, it’s that Carolin Messier, owner of the almost-erstwhile pintxos bar, will have more time to focus on her other restaurant, Madison Valley gem The Harvest Vine.

Already in the works: weekend brunch. Starting May 1 the teensy tapas bar will serve Basque-inspired breakfast 10am-2pm.

Current Txori chef Joey Serquinia is working with Messier to coordinate the menu, which she says will include huevos flamencos, eggs with pork belly, and tortillas. Messier has been honing her bakery skills, so fresh pastries—ensaimadas, croissants—will be on hand, too. Eventually Messier hopes to serve in-house preserves. Reservations are accepted.
