Polished new restaurant Circadia will open this summer at Seventh and Olive, bringing more elegance and fine dining to Seattle's culinary scene, the Seattle Times reports. Chef Garrett Melkonian, a semifinalist for James Beard Award Best Chef Northwest when he was at Mamnoon last year, will be heading the kitchen. Menu plans include raw scallops shaved table side into boiling mushroom consommé and côte du boeuf with an eggplant and shiitake mushroom sofrito.

Melt at Bar Sue
Atta Boy Sandwiches ended their nightly sandwich service at the 14th Avenue bar back in January, and now Nate's Wings and Waffles owner Darren McGill will take over the bar's kitchen, reports Eater Seattle. The menu's focus is definitely cheesy: mac and cheese and grilled cheese sandwiches. Five mac and cheese variations include jalapeño popper and gnocchi truffle, and griddled bread will be stuffed for sandwiches like the "Fatter Elvis," built of bacon, mascarpone, peanut butter, and bananas.

Marine Hardware
An announcement came a few weeks ago that Ethan Stowell will be revamping Chippy's to Marine Hardware, and this Thursday, March 3, is the soft opening featuring about a dozen a la carte items and two tasting menus.

Café Avole
March 12 is the opening day for the crowd-funded Ethiopian coffeehouse, reports Eater Seattle. Owner Solomon Dubie remodeled Rainier Mini Mart on Rainier Avenue South to celebrate beans sourced from Ethiopia, the birthplace of coffee, through espresso, iced coffee, and pour overs while also serving light café fare like paninis, soups, mornings waffles, and Ethiopian ambasha bread.

Shift Changes

Carolynn Spence at Shaker and Spear
Coming straight from Chateau Marmont, where she spent 10 years as executive chef, Spence is now leading the kitchen at the Belltown's coastal seafood restaurant where she has already created new menus.

Taco Chukis
South Lake Union will welcome the tiny taqueria at 810 Dexter Avenue North soon as the shop expands to its second location, Capitol Hill Seattle reports. The original in Broadway Alley will live on, but the new Chukis will allow the team to try some different things in both locations.

Little Uncle
The East Madison Thai walk-up has closed, but only temporarily, as the crew prepares nearby Big Uncle for its approaching opening date.  UPDATE: Little Uncle's sit down restaurant is now open as of 5pm, March 4. The walk-up will remain closed for a few weeks as the owners find their rhythm at the new restaurant.

New Ownership

BB Ranch
The Woodinville butcher shop has a new proprietor a butcher who goes by the name Gizmo. He plans to keep the same business model and standards of locally sourced, hormone- and antibiotic-free meat, poultry, and game.

El Gaucho and Aqua by El Gaucho add 20 percent surcharge
The steakhouse and sibling seafood restaurant are the next Seattle establishments to instate a 20 percent surcharge in lieu of tipping, which also includes complimentary valet; the policy begins March 21. The switch is spawned by a growing number of restaurants that have added a surcharge to help pay for the $15 minimum wage.
