Standard Bakery Opens for Breakfast and Lunch in South Lake Union

Organic cookies, croissants, and sandwiches.

Standard Bakery (formerly Pocket Bakery) quietly opened this month in the new 400 Fairview building in South Lake Union. Owner and baker Josh Grunig built a following through a series of popups in the Central District and a presence at the U District and Fremont markets; busy behind the counter, Standard's Jocelyn Jones says she has already noticed a few regulars. 

The bakery shares the space (and some seating) with a new location of Juicy Cafe, but the large ovens are a dead giveaway as to which one is the bakery, as is the beautifully organized display of croissants, cookies, scones, and muffins. Jones says the classic chocolate chip cookie and the chocolate sandwich cookie have been popular picks. 

So far, says Jones, the bakery is busy right at opening (7am Mon–Fri) with customers coming in to grab breakfast sandwiches (new to the menu due to popular demand) and a drip coffee before work. The lunch crowd favors the soup and salad combo, which comes with a slice of Standard's housemade sourdough bread (one of Grunig's staple creations).

Grunig originally had his sights set on a Central District location but another business got the spot before him. In the 400 Fairview building he joins a collection of food and drink spots including Meat and Bread and an upcoming project from the Mamnoon team.
