Skillet, the brand that began as one of the city's original food trucks, is opening a new location. No surprise, it's ideally situated to serve the new wave of Amazon buildings going up along Westlake, in that little snippet of city where Belltown meets downtown meets South Lake Union.

The precise address: 2050 Sixth Ave, in one of Amazon's new buildings, just around the corner from McGraw Square, where Skillet's Airstream currently serves lunch twice a week.

This latest Skillet won't have "Diner" appended to its name. Though the aesthetic will be similar to the Skillet Diners in Ballard and Capitol Hill, the relatively smaller space (40 seats, 1,700 square feet) and the particular needs of this neighborhood will likely give this Skillet its own persona.

Plus it's a chance to get back to Skillet's roots, says company president Jon Severson, who joined the Skillet operation as opening chef at the Ballard location and assumed the top spot when founder Josh Henderson decided to focus on his Huxley Wallace Collective. "I hope we have great dinner business, but I think it’s going to be more of a lunch and breakfast crowd, and more of a happy hour crowd."

The menu will have plenty of Skillet familiars—the fried chicken sandwich, the bacon jam-bedecked burger, and the kale caesar that helped usher in our civic obsession. The breakfast menu will have the "ringers," says Severson, like deconstructed corned beef hash, the pork belly and cornmeal waffle, and biscuits and gravy.

The rest of the menu, particularly the lunch menu, will bear the seasonal stamp of Skillet chef Nick Novello. He's readying some sandwiches and salads just for this location, like a chicken salad sandwich made with pickled golden beets, toasted walnuts, and an herby, spicy egg spread on rye.

A refrigerated case by the door will have a few grab-and-go salads, sandwiches. Skillet will also use a few different services to enable delivery and ordering ahead...including Amazon's new Prime Now restaurant delivery service.

Right now it's looking like a mid-December open; Severson says a 40-seat patio is also in the works.

Recently the number of new restaurant announcements in South Lake Union and its Amazonian environs has rivaled Capitol Hill. Skillet's own founder, Josh Henderson, has a fast-casual burger spot opening a block away, and recently Vulcan unveiled a lineup of eateries along nearby Ninth Ave North. This new Skillet will kick of breakfast at 8am, serving dinner and drinks through 9pm Monday through Thursday, and 10pm Friday through Sunday
