Pinball-loving ice cream emporium Full Tilt is endlessly creative when it comes to collaborations, crossovers, and making generally ass-kicking ice cream. However its latest project crosses the boundaries of ice cream entirely. Owner Justin Cline says the company has a vegan taco truck in the works. It's called The Luchador Taco Co., and it might hit the streets by late March.
The Full Tilt team has been kicking the idea around for a while, says Cline, and recently purchased the former Fusion on the Run truck. "My family is vegetarian; we go to taco trucks all the time and I get tired of rice and beans. It sucks." Add to that the fact that vegans account for one-third of Full Tilt's ice cream sales.
Luchador's menu is still in the works; Cline promises tacos and tortas augmented with things like avocado and Field Roast chorizo, plus an al pastor taco that subs portobello mushrooms for pork.
The truck will also serve nachos. "To me nachos have to have that cheese with a kind of pump taste," says Cline. His staff has been working on a recipe, and Cline thinks they've got the winning formula.
No plans for locations just yet (maybe talk to these guys?) but Cline says he won't be selling tacos in White Center, already a bastion of excellent tacos and home to Full Tilt's original location. "That would be embarrassing."
The Luchador Taco Co. has the snappy logo seen above, but no website or Facebook yet. Keep an eye on Full Tilt's various social media outlets for more specifics.
