In pirate lore, this is a catchall term for any face-punchingly boozy libation. West Seattle’s piratical sexagenarian dive bar was recently reborn with upgraded cocktails, like a Clap made with smooth Mellow Corn whiskey, organic maple syrup, and Carpano Antica, a vermouth so versatile that owner Allison Hill calls it “bartender’s ketchup.” It tastes like an old-fashioned fraternized with Halloween candy, thanks to a housemade garnish of caramelized bitters and sugars. benbowroom.com
