Hooray! Owners Amanda Bedell and Phebe Rossi sent word that Nuflours, their emporium of wheatless delights, will open its doors October 10.

Technically the ladies have been in the space for several months, baking in the production kitchen and selling their spinach puffs and pumpkin bread and danishes at farmers markets around town. Their space at 518 15th Ave E has held some form of bakery for 80 years, most recently North Hill Bakery.

When Nuflours opens, it will sell breads (focaccia, garlic parmesan loaf, sandwich breads, etc.) and breakfasty things like quiches, scones, muffins, and cinnamon rolls. The lineup of cookies brownies, and bars should look familiar to anyone who has encountered Rossi's baking talents before. I ordered a gluten-free birthday cake from her years ago, when Nuflours was still known as D:floured, and she somehow achieved a richness that left our entire dinner party groaning for mercy. Oh, right—cakes. Some classics like chocolate and carrot will be available, too. As will coffee from Conduit, Anchorhead, and Caffe Vita. 

Hours will be 7-6 Tuesday through Saturday and 8-5 on Sunday.
