Renee Steen and Jess Whitsitt, owners of Fremont sensation Pie, are opening an outpost in the renovated Seattle Center House.
“Our heart is in Fremont but we are ready to spread the pie love,” says Whitsitt, whose palm-sized pastries have become a bona fide hit since Pie opened in January 2011. The duo had been looking to expand to South Lake Union when the invitation from Seattle Center arose. They signed papers Friday afternoon.
Whitsitt was quick to stress this new spot isn’t a micro shop but rather a full-scale operation. Baking will happen on site, and the menu will likely include five or six savory pies and six sweet ones. Said menu will rotate, possibly to coincide with Seattle Center’s many ethnic festivals, and feature several standards as well. Rounding out the bill are pie milkshakes, Full Tilt ice cream, and Victrola coffee. Whitsitt also mentioned a beer list heavy on Ballard and Fremont breweries. The goal is to open a week before Memorial Day weekend.
Skillet also recently finalized plans to open at the Center House, or what’s now being called the Armory. With several more notable local purveyors reportedly looking to lease, the once humdrum food court is shaping up to be quite the dining destination.
