Serafina’s Longtime Chef Now at Bin on the Lake

Dylan Giordan is reimagining the menu at the upscale Kirkland favorite.

Dylan Giordan, who has been with Serafina since 2001, has moved to Bin on the Lake in Kirkland.

Chef Dylan Giordan, who spent the past decade at Eastlake institution Serafina and its newer sibling Cicchetti, has crossed the icy waters to be chef de cuisine at Kirkland’s restaurant Bin on the Lake, a viewriffic wine-focused seasonal restaurant affiliated with the Woodmark Hotel.

According to the official announcement, Giordan will be adapting the restaurant’s current offerings in the coming weeks while he gets ready to unfurl an entirely new menu.

When one chef takes a new job, the effect reverberates among other restaurants in the city. Giordan is replacing previous Bin chef Paul Hyman, who is now in the kitchen at Marjorie. And back over in Eastlake, Serafina/Cicchetti’s former sous chef Brian Clevenger is now running the show as executive chef.
