Jason Franey of Canlis Among Food and Wine’s Best New Chefs

Announced today: The Seattle chef has made the top 10.

Jason Franey is one of Food & Wine’s Best New Chefs this year.

Food and Wine magazine announced its Best New Chefs 2011 today. Among them: Seattle’s own Jason Franey.

“Why he’s amazing,” according to the magazine: “Because he has somehow kept his restrained and subtle style of cooking while maintaining Canlis’s famed lavishness.” His must-try dish: “‘Of Earth and Ocean’—a classic Canlis dish of avocado, prawn, and mango updated with braised octopus, lobster knuckle and Hawaiian seaweed.”

Also on the list: cheflebrity Stephanie Izard of Girl and the Goat in Chicago (who beat recent Top Chef All-Stars victor Richard Blais back in Top Chef season four).
