Ahead of the cold brew curve, Anchorhead Coffee started bottling its caffeinated elixir in May 2013. After growing a reputation around its legit brew and fair trade, whole bean roastery based in Duvall, co-owners Mike Steiner and Jake Paulson are opening their first full-on cafe in Downtown next month.

The lofty 1,100 square-foot space on 7th and Olive Way will source pastries locally, but bake them in house—look for the usual pastry fare: breakfast galettes, scones, and croissants. There will also be waffles, one in particular Paulson calls “magical.” It’s a cinnamon roll made with laminated croissant dough, cooked to order in a hot waffle iron.

Hand-pulled espresso will come from Synesso machines, which are hand built in Georgetown, while their rotating menu of single-origin coffee will be made via pour-over methods. As for the cold brew, Paulson says there will be at least four taps dispensing things like their ready to drink brew on nitro, coffee concentrate to be used in iced lattes and mochas, a seasonal offering like their whiskey barrel aged cold brew, and a single-origin cold brew made with their Ethiopia whole beans. They’ll also tap their hopped cold brew made with citra hops and their house blend Narwhal coffee.

Anchorhead will also have beer and wine on tap and sourced from nearby purveyors. To start, they’ll bring in beer from Black Raven Brewing Company, which makes sense since they’ve already collaborated on the coffee-based Gunpowder Plot Nitro Porter. Yes, it is a nod to a certain masked vigilante, Guy Fawkes. 

With experience in audio and live sound, Paulson says Anchorhead will host the occasional musical event: “We do have a huge background of touring, so we'll definitely be incorporating something like an acoustic set with a band that's playing in town that week.” Also pending on the cafe’s schedule are weekly cuppings, or coffee tastings, and brewing classes, some Paulson sees a big lack of in Downtown.

And no surprise, this coffee company with retail origins will sell their bottled cold brew and lineup of organic whole bean roasts to go.
