Forget sexy, over 30 local restaurants are bringing herring back...at least for this coming week. From June 20–26, savor the humble herring in many iterations. Here’s a snapshot of what to expect:

Altstadt
Bratherring: Crispy, pickled herring with crayfish butter, spring vegetables, black morels, fish dumplings, and crayfish

Lark
Crispy herring tartine with dill aioli, fennel cabbage slaw, and malt vinegar gastrique

Le Petit Cochon
Tobiak herring escabeche with a snap pea and fava bean panzanella as well as tempura squash blossom

Little Uncle
Southern Thai sour-and-spicy curry with Togiak herring and green papaya

Old Ballar Liquor Co.
Tarragon and blueberry pickled Pacific herring...from scratch, y’all

Salted Sea
Smoked herring hush puppies with a tangy sambal ketchup
