Over the past year, what’s the only Seattle restaurant trend more rampant than restaurants opening on Capitol Hill?

Alright—there is no trend more rampant than restaurants opening on Capitol Hill.

But this one’s close: A cuisine—make that set of cuisines—so universally beloved and so utterly Seattle, it also encompasses our Restaurant of the Year and our Chef of the Year. A set of cuisines far easier to get wrong than right. A set of cuisines which includes sensational porridge in a Pioneer Square basement, killer happy hour eats in a wood-timbered masterpiece, and a mod joint serving ten-course feasts which might include smoked cedar gelato.

Have I given it away? Yes or no, click the Restaurant Issue of Seattle Met for the appetizing details.
