Restaurants across this city are offering more gluten-free options than ever. Some are even edible.

Call it an epidemic, a social contagion, a fad—gluten avoidance is bigger than it’s ever been in Seattle, and restaurants are responding in kind.

In honor of the new year, I went on a hunt for the best of the gluten-free food…and found it in the most unexpected places.
