Skillet Diner Expands West  
Get ready, Ballard. Joshua Henderson is bringing his crowd-pleasing (and crowd-gathering) formula of cocktails and upscale diner food to 2034 Northwest 56th Street. Expect a pretty faithful recreation of the Capitol Hill original—but with a bigger bar and a killer patio.

Mezcaleria Oaxaca Expands East 
The owners of La Carta de Oaxaca and Mezcaleria Oaxaca are opening a mezcal-fueled sibling at Summit and Pine on Capitol Hill. Their plans: the same adoration-inspiring Oaxacan fare and a rooftop patio. Our plans: Be there on opening day.

Rachel’s Ginger Beer Comes to Pike Place Market
The Seattle’s Best Coffee space will be reborn as a soda fountain–slash–cocktail bar. Order a ginger-beer float made with Cupcake Royale ice cream or just go straight for the cocktails. Most, but not all, are of the gingery persuasion.

Beecher’s Plans Two New Restaurants
Kurt Beecher Dammeier’s Mercer Island restaurant is named Bennett’s, after his oldest kid. Now his other two sons are getting their due with Liam’s, bringing family-style dining to U Village this fall, and Max’s, a South Lake Union temple of “meats cooked with fire,” partly inspired by his porcine Maximus/Minimus food truck, opening next year.
