Humina: Monte Cristo food truck will specialize in grilled cheese sandwiches.

After seven years as director at Taste, Danielle Custer is bowing out. She’s planning to launch a food truck dedicated to all things cheese.

“She’s been wanting to do this for quite some time,” said a rep for Custer. “She misses cooking and creating and cheese is one of her favorite things.”

If all goes as planned, Monte Cristo will launch in May as the ultimate comfort food wagon. Custer hopes to create a daily menu of eight grilled cheese sandwiches. Soups and artery cloggers like fried curds, mac and cheese, salad with bacon and blue cheese dressing, and possibly poutine will round out the offerings.

Kristin White, formerly the catering director, is stepping in as general manager at the Seattle Art Museum restaurant, and Cafe Juanita alum Jason Halstenrud as restaurant manager.
