Well, friends, it has happened. Din Tai Fung is now open and serving soup dumplings in Downtown Bellevue.

Reports on Twitter yesterday warned of three hour waits, so if you’re not totally crazed to try xiao long bao, you might consider holding off a day or two. And while speculation is already rampant as to how the Bellevue branch will compare to Din Tai Fung restaurants around the world, we all might consider giving them a few weeks to work things out before delivering our verdict.

It’s a tough job, this opening a new restaurant.
