Food News: Sitka and Spruce Sets Tentative Opening Date

Matthew Dillon expects to be up and running by the end of the month.

Just got in touch with Matthew Dillon, who tells me he’s hoping to open Sitka and Spruce May 25. When I last spoke with him, Dillon was expecting to wrap up construction this week and jump-start business shortly after—looks like he’s not too off target.

When Sitka does open, it will join the other buzzed-about tenants of Capitol Hill’s Melrose Market, located between Pike and Pine streets. You’ll remember Sitka was formerly situated in Eastlake, in a snug strip mall storefront now housing Nettletown.

Dillon is also opening Bar Ferd’nand in the Melrose Market, a joint venture with Corson Building sommelier Marc Papineau and friend Jared Baily. The wine bar/nosh spot/retail outlet will sit across from Sitka and serve as a sort of waiting place for diners. Expect that to open in July.
