Yesterday marked the grand opening of Niche Gluten Free Café and Bakery, chef and baker Toby Matasar’s gluten-free hot spot across from Seattle U.

That makes it way too new to review—but here’s why I know it’s one among the pantheon of g-f openings across Seattle that bears watching: Toby Matasar is gifted. Her Eats Market Café in West Seattle gained a huge following for what I once labeled “pedigreed comfort food”: cinnamon-swirl French toast, upmarket Egg McMuffins, a matzoh ball soup to make Bubbe cry.

Then two things happened: Matasar went Paleo (“I literally felt like I was given a new body within a week of eating this way,” she writes on the Niche website), and Eats’ landlord decided not to renew its lease. Eats closed quietly in July.

The Niche menu will carry gluten-free daytime foods—including the spinach salad and the veggie burger beloved at Eats—along with panini and baguette sandwiches and, yes, waffles. Wine and beer too! Hours are 11am to 8pm, Mon through Sat.
