In The Works

Bruciato
Hitchcock restaurant and deli proprietor Brendan McGill announced he's found a permanent home for Hitchcock's Monday night pizza popup, known as Bruciato. Eater Seattle reports the new space on Bainbridge will hold 80 to 100 seats and source as much as possible from his farm Shady Acres, showcasing his Mangalitsa pigs, for plates and toppings.

Farewell

Soba Farewell at Miyabi 45th
Soba noodle craftswoman Mutsuko Soma is expecting a baby girl thus stepping away from her chef role at the Japanese restaurant in Wallingford built around her talents. Your last chance to order the West Coast's only handmade soba is February 13, though Soma plans to resume her Kamonegi soba popups in the future.

Opening

Grappa
The first of the month brought the opening of Mediterranean-Italian restaurant Grappa, where it replaced La Lune in Queen Anne. Eater Seattle reports over a dozen grappas on the menu and dishes like hummus, bolognese, and even a grappa ravioli. Try that one for creativity.

Meet the Moon
Leschi's new all day cafe that runs through dinner has opened with a plentiful amount of comfort food on all seven menus. Biscuits and gravy for breakfast, spicy fried chicken sandwiches on lunch and brunch, plus a rotating selection of tacos at dinner chosen by chef Omar Salazar-Cruz. And if you're in a pinch for breakfast all the pastries are housemade, so start with a satisfying treat like the coconut-date bar or banana bread, because that's a perfectly acceptable way to eat fruit for breakfast.

Heartwood Provisions
Heartwood will open Monday, February 8 at First and Spring. The menu and concept has been crafted around perfectly paired cocktails and dishes. One option on the menu: duck confit, emmer, and a smoked tomato vinaigrette paired with a libation of cider and cognac. Perhaps an interesting new take on post work dinner and drinks. The bar opens at 4pm with dinner starting at 5pm.

Approval

Sea Breeze Farm in Pike Place Market
Getting an approval as a permanent vendor in Pike Place Market is a lengthy one, but Sea Breeze Farms has passed the test with an approval last Wednesday reports Eater Seattle. The owners have yet to sign the lease, but once operating, large cases of cow, pig, and lamb meats, plus pâtés, eggs, milk, and wine will be for sale at their stall in the Corner Market building, previously occupied by BB Ranch. Also in the works is a plan for their onsite restaurant popup called Graze, if approval goes through.

Replacements

Drae's Lake Route replaces Rainier Beach's Nate's Wings and Waffles
One of the original owners of Nate's now operates the previous wing stop and renamed the restaurant Drae's Lake Route. The menu has expanded but still expect wings and waffles, along with more comfort and breakfast food.

Shift Changes

Roger Harper to Zoë
The previous chef de cuisine at 99 Park in Bellevue and sous chef at RN74 is the new chef at Zoë.

Miles James at Radiator Whiskey
Bethany Jean Clement's article gathering up local chefs for the Pho Super Bowl Challenge included a notable bit of info: Miles James is now cooking at carnivore-friendly Radiator Whiskey in Pike Place Market.
