Poulet Bleu Dinner at Copperleaf

Giving “tastes like chicken” all new meaning

This one’s special.

Next Friday, May 22, Copperleaf Restaurant and Bar at Cedarbrook Lodge near Sea-Tac will celebrate Lummi Island Poulet Bleu Chicken with a five-course, wine-paired dinner.

What’s so great about the Poulet Bleu? Tender meat and much more intense chicken flavor than most American diners are accustomed to, thanks to birds bred and fed to mimic the famous Poulet de Bresse from Burgundy. Two poultry growers (including Lummi Island's Riley Starks) are raising the birds in Washington state, both of whom will be on hand at Copperleaf to bring this bird’s storied history to life.

The dinner is $95 per person, tax and tip additional, with Poulet Bleu in every course. Dessert even.
