Roz Edison and Kamala Saxton built a tremendous following with their spam musubi and kalbi sliders, first at Marination Mobile and then its two brick-and-mortar outposts. Now the ladies are planning their first venture that won't be part of the Marination nation. The name won't even end in "-ation."

Edison and Saxton have partnered up with Josh Kelly, who was prevoiusly the head chef for all things Marination, and his wife Nancy to open Good Bar in a little neighborhood south of downtown called Pioneer Square.  

What you'll find at Good Bar: classic cocktails, a thoughtful beer program, and the promise of "one of the best sloppy joes you've ever had." What you won't find: Spam, Nunya sauce, or anyhing from the Marination menu. Though Saxton promises the same type of sunny hospitality that helped build Marination's unusually fervent fan base.

It has long been the Kellys' dream to open a bar, says Saxton, and this is very much their brainchild (I'm hoping their New Orleans background influences the food menu). Meanwhile, Saxton and Edison had been pondering how their company might grow. Three months ago, Saxton happened upon the former Japanese Commercial Bank building at Second and Main, with its soaring ceiling, ornately adorned mezzanine, and massive old bank vaults still in place. 

"I thought, this is the most beautiful, elegant, interesting space I've seen in the city," she recalls. It's also the aesthetic opposite of her other ventures, all the better to give Good Bar its own distinct identity.

The bar will be open "from 4 until late" and seat about 60. There's talk of beer dinners and other events happening up on that mezzanine, and I have a feeling a rollicking happy hour is in store. The partners called in Quentin Ertel of the Saint and Havana to consult, and former Marination Cicerone Robyn Schumacher, now a brewer herself, is plotting the beer program.

Good Bar could be open as early as June. Or maybe July. You know how these things go. Until then, ogle these interior photos from Saxton.
