 I’ll admit it—I have a soft spot for Veggie Grill. Mostly because it allows me to indulge my sordid love of the whole buffalo chicken bar-food oeuvre without feeling gross for the next two days. 

Now the California-based fast-casual vegan chain with a passionate fan base has a downtown location in the works, at 1427 Fourth Street between Pike and Union. Veggie Grill arrived in Seattle just last year, with locations in South Lake Union and University Village. The company shies away from the term vegan, preferring to describe its comforty menu of sandwiches, salads, nachos, and mac and cheese as “100 percent plant-based.” 

No word on the projected opening date—the Veggie Grill team said permiting and construction schedules makes it difficult to nail down a timeline—but fans of kale salad and masterfully engineered meat substitutes should stay tuned for more details.
