In the latter part of June, brothers and co-owners Bo and Tom Saxbe opened up their sandwich shop in Interbay at 3204 15th Avenue West. In the same name and vein of their Cheese Wizards mobile trucks, the grilled cheese sandwich is king, or rather, Goblin King.

If you’re familiar with the trucks’ menu, expect a similar offering: grilled sandwiches of creamy dill harvarti and mozzarella cheeses with tomato, basil, and a balsamic-pesto aioli, or one with provolone, mozzarella, and mortadella with salami and black forest ham. Stay tuned for more seasonal options as well as a forthcoming brunch menu. There’s serious talk of a croque madame–esque overeasy egg grilled cheese sandwich. Perfect for second breakfast or elevenses.

Happy to have more square footage to play with, the Saxbe brothers even made and installed a wall of storied swords and weapons to keep with the nerd lore vibe.

Bo Saxbe says they’re still adding to their mobile fleet “in the form of Wiz-Two, a spacious former Hollywood craft services truck.” Word is they’re transforming it into some sort of floating castle because why not.
