A hip and sparkling urban nightlife scene

Tucked under the stairs at W Bellevue hotel behind a faux wall, Civility & Unrest is a speakeasy-inspired cocktail bar with a swanky atmosphere and signature cocktails. Creative Director/Bartender Joe Dietrich is known for his innovative twists on the Manhattan, whiskey sour and presentation cocktails with blowtorches that waft the scent throughout the room. 

You can start the evening there, then head upstairs to the Living Room Bar and The Porch, both bars inside W Bellevue, for evening DJs and a lively night of mingling and unwinding with friends.

Right next to W Bellevue is Central Bar + Restaurant, a busy, stylish hotspot that’s a favorite with locals looking for excellent Pacific Northwest cuisine, classic cocktails and some of the best people-watching in town. 

Flights of fancy — gin and tequila

At Castilla, Chef Clara Gutierrez Carroll says, “When people come to the restaurant, I want them to feel like they walk into a tapas bar in Spain. I want them to get the ambiance, the food, the smells, and the flavors of Spain.” The menu features 40 different tapas, or small plates, full-bar service and Spanish and domestic wines. The stand-out libation, however, is Castilla’s Build Your Own Gin & Tonic, where sippers can choose among more than a dozen different gins, artisan tonics, and garnishes that include apple, orange, lemon and grapefruit.

At Cactus, a casual gathering spot known for its bustling happy hour, a substantial part of the menu is devoted to antojitos, bocaditos or tapas—small plates perfect for sharing with friends. Tequila in all its delicious variety is the perfect accompaniment to the small plates, and tequila flights — samplers of each agave served in hand-blown glassware — are perfect for sharing.  Cactus is famous for the breadth of its tequila offerings, from the bracing, unaged Blancos, to Mexico’s most popular Reposados, which have a bit less edge, to the sipping Añejos and Extra Añejos, considered the most luxurious, complex and smoothest of all.

The perfect marriage of wine and food

At JOEY Bellevue, casual upscale dining is paired with exceptional service and thoughtfully curated wines perfectly pair with any menu item. You’ll find everything from small plates and sushi to prime steaks, seafood and pasta. Not to be missed are classic cocktails such as the old fashioned, daiquiri and margarita, and the signature peach bellini, sangria, and espresso martini.

Wild Ginger’s family-style service, like in classic Asian restaurants, encourages diners to share innovative tastes from China, Indonesia, Malaysia and Vietnam.
