Celebrate 1 Year with Heartwood Provisions

Restaurant celebrates one-year anniversary with special tasting menu

Heartwood Provisions, the pairing-concept restaurant that opened in downtown Seattle last year, is celebrating its first birthday with gifts. Gifts for diners, that is. From January 17 to February 8, Heartwood will be serving up a three-course menu comprised of some of their favorite dishes from the past year.

As a bonus, the prix-fixe meal is just $60 for two—half what it might normally cost.

The tasting menu will offer diners the choice of three first courses, four mains, and three desserts. First options will include the restaurant’s beloved Original Provision—a wagyu beef jerky with a spicy chili preserve, a kale salad bearing Jamon serrano, and yellowtail drizzled in a lemon-pimenton vinaigrette. Featured plates will include a vegetarian option—think kabocha squash with chevre and sofrito. Other favorite dishes offered are roasted scallops with mango-chili puree, a wagyu butcher steak, and braised oxtail with roasted roots, juniper crumb, and horseradish cream. The menu closes with desserts both savory and sweet, including a panna cotta with a caramel smoked in-house by chef Varin Keokitvon himself.

Heartwood Provisions falls into a unique class of restaurants where majority of dishes are designed to pair with a specific beverage. The beverages are designed to serve as counterpoints to specific dishes. Chef Varin Keokitvon and Beverage Director Amanda Reed designed Heartwood’s a menu to work in pairs. Original beverages are created to enhance the food, which in turn serves to embellish the drinks.

Heartwood’s celebratory menu will be available for three weeks and ends just before Valentine’s Day. But, at $60 a couple, it’s an excuse to celebrate early.
