From the sidewalk it looks like a casual Vietnamese cafe, but Stateside is in fact a singular extraordinary destination, capturing French colonial Indochina both in tropical setting and rousing food: the roots and branches of Vietnamese cuisine. Chef-owner Eric Johnson brings Michelin-starred experience and exacting standards to both classics (master stock crispy chicken) and playful inventions (Vietnamese iced coffee Creamsicles), and service is pitch perfect. An adjoining bar, Foreign National, makes a moodier stage set for equally careful cocktails and bar noshes.
