Secretive Incubator Food Market Launches in Seattle

Dozens of budding chefs will congregate September 29. But where is hush-hush.

Michaela Graham used to live in San Francisco. There she would frequent an underground market showcasing up-and-coming food types—ones who were just getting their feet wet. The carefree markets were a chance to sample all kinds of stuff "you just don't find in restaurants," Graham recalls fondly, a sort of testing ground for the budding chefs.

When Graham relocated to Atlanta she was dismayed to find something similar didn't exist. Rather than dwell on it, she organized her own underground affair. Two thousand people lined up. She continued running the bazaar for a year and half to similar success, and has since turned it over to someone else. Now Graham has her eye on Seattle.

For the past several months she's been rallying vendors for the inaugural Seattle Underground Market taking place September 29. She's hoping to gather between 35 and 40 of them but still has spots to fill (interested?). As in Atlanta, Graham envisions this Seattle event to be an incubator of talent. As she puts it: "How do you get from to loving to cook to having a way to get it to people?"

She's expecting a big turnout, and in this food-rabid city, why wouldn't she? Attendees pay $5 at the door. Inside they'll need to shell out cash at the individual stalls, but most portions cost just a couple bucks. Marketgoers are not provided a map, so as to encourage them to explore all their options (Graham estimates 100 or so dishes) instead of resorting to what's familiar.

Oh, and the location? That Graham won't reveal until the day before via email (there's that whole underground thing, remember?). Going forward Graham hopes to coordinate markets once a month.
