Farm Dinners from Sutra Chef Colin Patterson

Chef Colin Patterson
My short list of the best chefs in Seattle includes the underheralded yogi Colin Patterson, who quietly provides inspired vegetarian cuisine in four micro-seasonal courses at the tiny dining room in Wallingford known as Sutra.
Here’s one example of the love.
I was speaking with Patterson by phone on a different subject when he mentioned the new farm near Sultan he and his wife/business partner Amber Tande acquired last winter. This summer he’s done a couple of farm-to-table dinners out there—told you he was quiet—including one this last Saturday. (The first one, on summer solstice, had all the diners running inside from the big wraparound porch when the sky opened up.)
The farm’s on five acres of forest and creek, with llamas, goats, ducks, chickens—and gardens. To enjoy Patterson’s cuisine in this setting each diner pays $125 for six vegetarian courses, matched wines, tax, and gratuity. Are there still seats left for this Saturday’s (July 28) dinner, offered by the Bloomspot coupon folks for $110? Go check, silly!
If not, be consoled: Patterson’s got a schedule full of plans, including a cooking class August 18, a canning workshop September 22, and as-yet-unscheduled yoga workshops (told you he was a yogi) capped off with multicourse dinners. By next summer his orchard trees, vegetable beds, and 18 blueberry bushes will be in full roar.
