That whoosh sound you just heard was a thousand Eastside singles swooning a little. Pearl opened off the garage at Lincoln Center in the heart of downtown Bellevue, featuring just the right ratio of dangerous good looks and food cred to become a Beautiful People destination along the lines of Joeys down the street. The place (formerly Trader Vic’s, but not so you’d notice) wraps you in pearly charcoals and silvers from your first step into the bar, then swaths you in the silky sheers that surround some of the tables and the techno chill that vaporizes out of the sound system. Pearl is the enterprise of a couple of Schwartz Brothers (Daniel’s Broiler, Chandler’s Crabhouse) expats, who’ve learned a thing or two about how to fashion a crowd-pleasing menu. This one’s full of satisfying Pacific Rim influences lunch and dinner and half-price-appetizer Happy Hour, and if nothing on it is going to knock you over—that bright-pink cranberry cosmo just might.
