The increasingly buzzy stretch of South Jackson Street, which includes Standard Brewing and The Atlantic, will add Wood Shop BBQ by this fall and comprise a triumvirate of beer, bistro, and soon barbecue.

Co-owners Matt Davis and James Barrington have been operating Wood Shop BBQ out of a food truck since 2014, garnering a reputation for damn fine barbecue at various Seattle watering holes like Chuck’s Hop Shop and Hellbent Brewing. A Kansas native, Davis has penchant for creating the slightly sweet yet robust flavor of hickory-smoked barbecue of his hometown. To do this, Wood Shop BBQ imports hickory as well as oak from the Midwest, offering an uncommon barbecue profile. Meanwhile Barrington, who hails from the lone star state, ensures Texas-style brisket is represented on the menu.

From the restaurant’s two smokers, Willy and Brad Pit, come forth dishes like Kansas-style pork spare ribs, aforementioned hickory-smoked brisket, Polish sausages, and The Woody, which is a plate of smoked jalapeño mac and cheese topped with pulled pork, pickled red onions, and Wood Shop’s signature slightly sweet, tomato-based sauce.

The Central District barbecue joint will be kid-friendly, sport a patio, and serve beer. It lands precisely at 2513 South Jackson Street, next door to the recently opened restaurant,The Atlantic. It's aiming for a late summer/early fall opening. As for the truck, it will still operate around town, serving ‘cue outside of local breweries among other spots.
