Kokkaku

At this Wallingford restaurant along 45th Street, which formerly housed Miyabi 45th, Kokkaku is all about the meats. The self-described Japanese-inspired meat house is a carnivore's paradise with such protein profferings as Wagyu tartare, pork tenderloin tonkatsu, pig ears, miso-braised beef rib bone, and a steak-by-the-ounce section harboring Wagyu tri tip, zabuton, flap steak, and more. The brains behind this meaty operation are chef Rudy Velasquez (Miller's Guild, Le Grande Bistro Americain, Brunswick and Hunt) and Julie Shizukuishi (front of house talent from Miller's Guild and Cafe Campagne) who met while they both worked at Flying Fish in South Lake Union. Between Velasquez's affinity for Japanese cookery and whole-animal philosophy and Shizukuishi's sake prowess, Kokkaku is an interesting addition to the neighborhood.
