Chef Shannon Galusha Is Leaving Bastille [Updated]

Shannon Galusha parts ways with the Ballard restaurant.
From the morning press release pile: Bastille toque Shannon Galusha is bidding adieu to the French cafe to helm a new restaurant venture, Classic Concepts Group. Galusha oversaw the opening of the Ballard Ave eatery and served as chef for two years.
Galusha joins Jeff Chandler and Matthew Schweitzer in the enterprise. The trio plans to “open several restaurants in 2011, with additional locations and concepts to be announced in 2012,” the release reads. Kent Station will serve as the launching ground, followed by the South Lake Union Amazon campus. As for the concept of the casual eateries, Galusha likens it to “Gramercy Tavern in New York City meets The Village Idiot in Los Angeles.”
No word yet on who will replace Galusha at Bastille.
UPDATE: Jason Stoneburner will assume the position of executive chef; he’s been Bastille’s chef de cuisine since the restaurant opened in 2009.
