Menudo is one of those labor-of-love soups that take all day to cook—as required by spongy textured tripe that needs time to mellow into tender, broth-imbued bites. (For extra unctuousness, add a bit of pork fat to the red chile pepper base.) Other traditional Mexican soups on the menu include pozole   with pork and hominy, spicy birria beef stew, and caldo de res, a beef stew comingled with hunks of veggies—corn on the cobb, squash, carrots, and chayote.
