Mike Jensen learned to smoke salmon from his father in Bremerton and has brought his skills to Seattle, where he is meticulous in selecting the spices for the brine and the hardwoods for the smoker. He does cold-smoked Nova lox as well—or if you prefer, bring in your own fresh catch and Jensen will take care of it for you.
