So nice of Sound Transit to run its brand-new light rail line right past Huarachitos, the second coolest thing to happen to the Rainier Valley in recent months. The humble taqueria features all the requisites of the genre—the long list of tacos (not just the seven kinds of pork, but longaniza sausage, shrimp, brisket, tripe, and more); the fat tortas and fried gorditas, decadent as drippy burgers; the telenovela burning up the TV screen. But the place specializes in a street-food delicacy rarely spied north of the 45th parallel. The huarache is a sandal-shaped corn tortilla, thick and slightly puffed, stuffed with a layer of beans, and topped with brisk, crunchy onions, greens, cilantro, and succulent shreds of marinated pork shoulder or whatever meat you fancy. Take it away or, better yet, stay: Huarachitos’ beer and wine list, patio, and exemplary guacamole almost render MLK Way a place to linger.
