Another food truck we’ve had our eye on won’t debut this summer as hoped. Cathy and Romano Basilio, the duo behind Xplosive, are now looking to roll out in October. (Which is shaping up to be one tasty month; the also-delayed Monte Cristo is aiming for the same time frame.)

Like brick-and-mortar restaurants, food trucks are subject to a snails-pace approval process that often hinders opening schedules. Last week the Basilios passed a preliminary health department review but will need to wait several more weeks before receiving an official approval letter. Once that’s in hand, a final inspection has to to happen. Then the two are taking what will surely be a much-needed vacation.

When Xplosive does debut, the truck will specialize in that trendiest of cuisines Filipino fused with Vietnamese (a combo of the couple’s roots). Menu items they’ve mentioned are the sweet sausage longanisa, sardines, beef steak, tofu, and lemongrass pork or chicken, available in foot-long banh mi, corn ­tortillas, or vermicelli bowls. Others may include banh xeo, or Vietnamese crepe, fresh spring rolls, adobo-style buffalo wings, or adobo chicken fried rice with an over-easy egg on top. Oh, and banh mi sliders called Grenades—so flavorful they "blow up in your mouth," says Romano.

The Basilios hope to have locations ironed out in August so keep an eye on Twitter for updates.
