Shannon Galusha, the chef at Bastille french bistro in Ballard, got his first job out of culinary school at Thomas Keller’s famous French Laundry restaurant in Yountville, California. On December 7th, in a delightful turn of events, Chef Keller came to Bastille, where he greeted guests and signed copies of his new book Ad Hoc at Home. (Ad Hoc is the chef’s casual Yountville restaurant).
Galusha kept busy serving his guests dishes out of the Ad Hoc book.* There were oxtail and mushroom mini-tartines, there was confit pork belly from Carleton Farms with carmelized cabbage, there were short ribs braised in red wine, there were apple fritters and ice cream sandwiches. There was Thomas Keller with a dashing red scarf swept over his shoulder. But let’s not linger on this, let’s move on.
Because that dinner is now over, never to be replicated. You can’t give it as a gift to your favorite food lover. Here’s what you can do: go to the University Bookstore today (December 8th) at noon, where Thomas Keller will be signing copies of Ad Hoc at Home. Have him make the message out to your foodie. Present while treating him/her to dinner at Bastille.
It’s the least you can do.
