Is Seattle Getting a José Andrés–Concepted Restaurant?

 This morning an awfully sharp friend pointed out a piece of real estate news reported last week that has some interesting dining implications. The Seattle Times reported on a new luxury hotel project from the SLS Hotels brand that will be part of the 43-story Fifth and Columbia tower. The 184 rooms will be designed by Philippe Starck, and the SLS Seattle will have “at least two restaurants and a bar.”

The culinary director of SLS Hotels? None other then Beard-winning, super-adorable Spanish chef José Andrés. SLS hotels in two other cities house restaurants by Andres. A source tells the Times that it’s too soon to say whether Seattle would get the same treatment, but hotel-industry news site HotelChatter confirms that “dining concepts will be developed once again by José Andrés.”

The project will break ground this fall and probably won’t be a reality until 2016. Obviously much could change in that time, but it sounds like somehow, some way, one of the most prominent chefs in the country will have his fingerprints on this space. It will be interesting to see how this project gets tailored to Seattle’s market…a market that can be wary of out-of-town chefs and anything uberslick.
