Beecher's Sea-Tac Location Opens November 1

Grilled cheese, mac and cheese, and Caffe Vita coffee will await travelers near the Horizon gates.

 When Beecher's Handmade Cheese founder Kurt Dammeier made plans to open in the airport's C Concourse, he was hoping for a late-summer debut, to catch the tail end of tourism season. But, like 99.9999 percent of projects like these, it took a little longer than expected. So the Pike Place Market landmark will be unleashing its oasis of cheese on November 1, just in time for the holiday travel season.

Dammeier says the space's layout and offerings are reminiscent the original spot in the heart of the market—with the notable exception that no actual cheese gets made at the airport. Travelers can buy packaged cheese, as well as a full cafe menu of grilled cheese sandwiches, cheese and fruit plates, breakfast items, and the signature mac and cheese. Beecher's is also running a small Caffe Vita adjacent to the cheese shop.

The Port of Seattle made some local headlines earlier this year when it green-lighted Beecher's but not McDonald's (the arches will not be ignored; Ronald McDonald and his retinue did eventually find a spot at the airport). The Sea-Tac Beecher's outpost is near the Horizon gates in a former electronics store.

So, holiday travelers, no need to suffer through those sad little snack boxes you can buy on the plate. You can also find Beecher's outposts at CenturyLink Field and, if you are so inclined, New York City.
