The longtime Ray’s Boathouse chef now heads up the kitchen at this downtown hotel and restaurant.

In November the former McCormick and Schmick’s location on South Lake Union reopened as Harborside, an entirely new chef-driven concept with former Ray’s Boathouse chef Peter Birk as the chef doing the driving. But now Birk is in the kitchen at Boka Kitchen and Bar, serving as executive chef at the downtown restaurant and its parent, Hotel 1000.

Wha? A rep for Boka says an official announcement is forthcoming, as soon as the chef gets his bearings in his new role. No word yet from Harborside (still a part of McCormick and Schmick’s, which is in the process of being acquired by Landry’s Restaurants).

Birk spent 11 years at Ray’s Boathouse, and held the title of executive chef there from 2007 to 2011. He was known there for organizing regular beer dinners, so I’m wondering if the Boka rep’s promise that further “changes are a-brewin’ over there” is a nod to some future beer plans?
