Chef/owner Miles James, who sadly shuttered his beloved Dot's Charcuterie and Bistro in 2014 (RIP frankfurter and fries), is back with meat-filled sandwiches, housemade charcuterie, and whole-animal cuts butchered in house. And appropriately enough, you'll find this all at Pike Place Market come Thursday, July 14.

Dot's Butcher and Deli, taking over the former BB Ranch space, won't be a clone of the bygone Dot's. Sorry, diehard reuben fans. James said earlier this summer that it will have the same spirit and same name, but it's a different place.

That place will be an old school–style neighborhood butcher shop, where you'll be able to take home expertly carved steaks, pasture-raised chicken, or those rarer game cuts like rabbit when you put in a special order. All sourced from Pacific Northwest purveyors? You bet.

James, a chef who undoubtedly knows his way around charcuterie, will also have an ever-rotating lineup of housesmoked meats and bacon, old world pâtés and terrines, plus a variety of fresh sausages. Other delightfully meaty offerings include crepinettes, smoked pork chops, porchetta, and more depending on the day.

As for that deli aspect, look for four different sandwiches offered daily for lunch. Oh yes, there will still be some classic Dot's greatest hits like the porchetta sandwich of roasted pork loin and belly with herb aioli and slaw. But there will also be a corned beef sandwich, a meatball sandwich, and a cheesesteak with thinly slice steak, Mama Lil's peppers, and hello, housemade cheese whiz. Uh, yes please.

To go with that sandwich: perhaps get a side of pasta salad made with Mike Easton's Il Corvo pasta; it's made with peas, chili flakes, and Parmaggiano Reggiano cheese.

Like many other Pike Place spots wedged into nooks and crannies and alleys, this deli has seven stools, people. Your best bet may be to just grab that damn tasty sandwich and walk about the market.

Other good-to-know information: Dot's Butcher and Deli is located downstairs in the Corner Market building at 94a Pike Street. Hours are daily from 10 to 6, with lunch aka sandwich service running from 11 to 3.
