Last time I was at Rain Shadow Meats, a sign caught my eye—a proclamation of Chicharrón Tuesdays at the butcher shop's Pioneer Square location. Owner Russ Flint has a knack for taking meatstuffs that are already pretty compelling (rib eyes, porchetta, slim jims) and making them even more desirable.
As the name implies, Flint's crew serves up bags of fancy pork rinds all day on Tuesdays (Pioneer Square only, sorry Melrose Market goers). Flint's kitchen manager ferments green chilies to make a hot sauce, straining away the solid chunks of the peppers to be dried up, ground, and mixed with salt to coat each puffed-up crunchy strip of Tails and Trotters pork skin. The results, says Flint, are "salty spicy, and tart." A bag runs you $5.
On a less pork-filled note, I can never get out of there without ordering some of Anna Wallace's celery soda. Wallace's Seattle Seltzer Co. is debuting her new orange soda at a happy hour this afternoon (4–6pm) at Manolin.
